Our version of coleslaw is really a meal in one and ideal for a takeaway lunch.
1/4 Red Cabbage
1 Med size Carrot
3 Celery stalks
1 Apple & or Pear
5 Medjool Dates
Handful Nuts unsalted (roasted Almonds and cashew, brazil)
Optional fine chopped chilli.
Optional cheese chunks
Shredded or finely chopped cabbage
Finely chopped onion
Chunky chopped apple
Dates, chunky chopped (from frozen is easiest as they can be sticky)
Add the nuts, if the nuts are too large break them up a bit wrap in a tea-towel and bash with a rolling pin or saucepan.
Mix all the above in a large bowl dry. Once thoroughly mixed add enough of our healthy mayo to cover everything.
At this point if you have made a big batch for a week, just add the mayo to the portion you are going to eat on the day just sprinkle some salt on the dry mix as a preserve for refrigerating.
For a complete meal on the go, add chunks of cheese.
